Salad for Breakfast

No, it’s not chocolate cake for breakfast ala Bill Cosby, but it is a great way to jump start your morning and get a serving or two of veggies in you. And make it mixed greens or romaine or something that is actually green, not that iceberg crap that barely passes as a vegetable. Make it just like you would make a salad for dinner. Oh, add some protein too. My favorite is feta cheese, topped with balsamic vinaigrette. Of course, this doesn’t fill me up, so I often add a PBH (Peanut Butter and Honey) sandwich, too, which gives me a little extra boost of protein.
